We have a windows 2003 server active directory domain with folder
redirection of the users my documents folder specified in group policy.
Folder redirection works fine.  We also have off-line files in use
successfully. However 3-4 days after a user leaves the office (where a
successful sync has occurred) he is missing files in his local my
documents folder that were present when he last sync-ed.  Other users
do not have this issue.  I have searched MS KB and Googled this issue
with no success.  Please advise.
Thank you.

This isn't really a folder redirection issue, it's an Offline Files issue.
Have you checked the event logs, etc? You might try posting in a Windows XP
group for more help.
